Sittella's first Pet Nat! Chenin Blanc Pinot Noir
Made from premium Western Australian Chenin blanc, primarily from the Swan Valley , and fermented in the bottle in the French tradition (Traditional method). We only use the finest Cuvee (500l/tonne), 9g/l Dosage. Off/dry style, crisp, vibrant and lively loads of primary fruit characters, a serious but everyday style of bubbles.
Pemberton 53% Chardonnay 47% Pinot Noir. 'Cuvee' meaning first pressed is the most desired juice. Aged for a minimum of 18 months in our cellars. A complex and Harmonious Sparkling wine.
New release in spring 2015. This Sparkling wine is made from premium Chardonnay and Pinot Noir from the Pemberton Region, and produced in the French traditional method. Made by the Saignee method, which means to bleed off, we soak our Pinot noir on skins for 24 ours to gain colour. Both varieties are hand picked and whole bunch pressed. tank fermented for purity and freshness, but yet a complex ans serious style of Rose. Minimum 18 months on sur lattes, 7.5g/l dosage, cracking style of freshness and purity, subtle oak use, lifted floral and citrus aromas, crisp fine palate, Vibrant with added complexity, which is Typically our house style.
A very typically Australian wine style. The wine has been fermented in the bottle, the French traditional way. Made from 50+ old vine Shiraz from the Swan valley. Great robust style of sparkling Shiraz, sweet scented and fruit driven, pairs amazingly well with Christmas cake. Traditionally a Christmas style wine, but also great for winter. Made like a red wine, just with bubbles.
This wine was made from several vintages, a concept and a dream that started back in 2011. The ultimate compliment to the Sittella series of sparkling wines has resulted in an ultra complex and multi-layered sparkling wine, crafted over many years with immense detail and foresight.
A complex style of sparkling wine, comprising of both an array of ripe fruit characters and typical yeast derived characters from the extended lees ageing. Fresh red apples, lemon and citrus curd accompanied with subtle toast, brioche and flint notes. The wine has the ability to age for a substantial amount of time, due to its natural acid backbone, which provides exceptional drive and length. Will develop more complex and toasted notes with time under cork.
